Executive Chef (m/ž)
JOB DESCRIPTION AND RESPONSIBILITIES:
- Plan and direct food preparation and culinary activities
- Creation of banquet offers and menus, a la carte menus and all other menus that meet quality standard
- Estimate food requirements and food/labor costs
- Supervise kitchen staff’s activities
- Arrange for equipment purchases and repairs
- Recruit and manage kitchen staff
- Emphasis on the administrative operations of the kitchen (expenses, normative's, procurement of goods)
- Give prepared plates the “final touch”
- Perform administrative duties
- Assisting in the preparation of the Annual Business Plan for Food and Beverage
- Strategically analysing business performance to facilitate accurate and meaningful forecasting, involving the respective Heads of Department as appropriate.
- Comply with nutrition and sanitation regulations and safety standards
- Keep time and payroll records
- Recruitment and selection of all culinary employees with support of HR and ensuring that Heads of Department follow hotel guidelines when recruiting and use a competency-based approach to selecting their employees
- Tracking and overseeing of punctuality and appearance of all culinary employees, making sure that they wear the correct uniform and maintain a high standard of personal appearance and hygiene, according to the hotel and department’s grooming standards
- Ensuring that employees follow all hotel, company and local rules, policies and regulations relating to fire and hazard safety, and security
- Maintain a positive and professional approach with coworkers and customers
- Responsible for central kitchen in hotel (550 seats), and also for other a la carte restaurants (steak house, pizzeria, sushi)
REQUIREMENTS AND SKILLS:
- Minimum 3-5 years working experience as a Executive Chef
- Excellent record of kitchen management
- Ability to spot and resolve problems efficiently
- Capable of delegating multiple tasks
- Communication and leadership skills
- Keep up with cooking trends and best practices
- Working knowledge of various computer software programs (MS Office)
- BS degree in Culinary science or related certificate
